Happy weekend everybody!! As a kid you never fully appreciate the wonderfulness that is the weekend. A small pocket when time seems to stretch the length of a day yet is over in an instant. Weekends are a constant struggle nowadays between wanting to do absolutely NOTHING but sit in bed and binge whatever old or new show I’m hooked on (Battlestar Galactica ftw!) and going out into the real world to be adventurous. Otherwise I just feel like I’ve wasted away my precious freedom.

But you know what one of the best compromises is? BRUNCH! Whether you stay in or go out to a restaurant, brunch involves people. and food. People AND food. But not people as food. Okay sorry I’m getting off track here. 

The next time you host a brunch, try this amazing alternative to pancakes called Dutch Babies (or German pancake)! A quick Wikipedia search tells me that the name Dutch Baby originated from the German pancake called Pfannkuchen, but were introduced in the Pacific Northwest in the early 1900s. You are welcome for the unwanted history lesson.

ANYWAYS. Making a dutch baby takes little, if not less effort, than normal pancakes. Whip up the batter in your mixer and then melt 2 tablespoons of unsalted butter in a large pan that has high sides

Pour the batter into the pan and bake in a 425 degree oven for 20 minutes.

That’s literally everything guys. I don’t know what goes down in the oven, but the sides puff up and leave a thin, crepe-like bottom. Its delicious. You can add a little lemon and powdered sugar or do what I did and toss some fruit into that sucker.

Depending on how hungry you are, I’d say this feeds 2-3 people. Or just yourself. It’s okay I wont judge.

Ingredients
  1. 2 tablespoons unsalted butter, room temperature
  2. 3 large eggs
  3. 3/4 cup whole milk
  4. 1/2 cup all-purpose flour, (spooned and leveled)
  5. 1/4 teaspoon salt
  6. 1/2 teaspoon pure vanilla extract
  7. 1/4 cup sugar
Instructions
  1. Preheat your oven to 425
  2. Combine eggs, flour, sugar, salt and vanilla extract in your mixer.
  3. Melt butter in a large skillet then pour in the batter.
  4. Bake for 20 minutes and top with a little lemon juice and powdered sugar or some fruit!
  5. Serve immediately
